Lamb Meatballs With Preserved Lemon

[Editor's Note: Lamb meatballs are a great variation on their beef or pork brethren—they have a lovely flavor and are very versatile. They can be served on their own or wrapped in pita or lavash for a hearty sandwich. This version features a zing from preserved lemon, which is one of my favorite flavor accents. --Genie]

Mediterranean Lamb Meatballs

But when I want something with a little more pizzazz, I make these meatballs inspired by Thomas Keller’s Ad Hoc at Home. These are wonderful for a weeknight dinner alongside a big Greek salad, and they make terrific party food, since there’s no cutlery needed. Serve with hummus or cucumber tzatziki for a tasty treat.
