How do you feel about lentils? I have a few family members who can't get enthused about them, but personally I don't think I've ever tried a lentil recipe that I didn't love. To me there's just something about the earthy, nutty flavor of lentils that's always appealing. Lentils are extremely versatile and even though I've probably used them in more than fifty recipes, I've never made anything similar to these Spicy Lentil Tacos from Phoo-d. I'd say this is a great recipe idea for Meatless Monday (and definitely a recipe that's been added to my personal "to-try" list.)
